In your latest dovetail process, you use a saw blade in your knife handle to mark the kerf. Then, you perform a contorted operation with a dovetail saw to deepen the kerf.  It occurs to me that it would be more efficient to skip the knife/saw step and proceed to cut the kerf directly with the saw.  Further, it seems to me that the reason for the contorted saw position is due to the interference of the European style vice.  If you used a traditional vice or a moxon vice, you could saw the kerf from the front in a normal, more comfortable position and probably increase your accuracy.  Just a passing observation.
